Sip a sparkling cocktail designed to complement each bold bite, then savor Nichole’s legendary Key Lime pie to finish the night on a sweet note. BIO: As a teenage busboy hustling through the lively Trick Dog in Irvington in the early 2000s, Chef Bryan Byrd never imagined he’d one day helm his own restaurant in the same iconic spot—a cornerstone of the Northern Neck’s culinary and cultural scene. After soaking up the vibrant flavors of the Florida Keys and mastering jerk and Caribbean-inspired cuisine as a culinary apprentice, Byrd returned to Lancaster County to launch Byrd’s Seafood, a food truck renowned for its oyster tacos. When the Trick Dog location became available in 2018, Byrd seized the opportunity to open Dredge Oyster & Seafood, bringing his culinary journey full circle. Today, alongside his wife Nichole, who manages the restaurant, Byrd offers a menu crafted for the most discerning seafood lovers and specialty cocktails that continue to delight guests. Dredge is open Tuesday-Saturday, 4:00–9:00 pm, at 4357 Irvington Road, Irvington, Virginia 22480.
