Joe Souders, celebrated grill master and owner of Joe’s Grill in Kilmarnock, will be NWP’s featured guest chef for September’s “Under the Pavilion” event on Thursday, September 17, from 5:00 to 7:00 PM. Attendees will enjoy adult beverages while learning the art of crafting authentic Italian artisan pizzas using premium ingredients and baking them in a Fire Magic® Outdoor Oven. As a young adult, Joe worked in renowned destinations such as Yellowstone, the Grand Tetons, and Vail, consistently finding his way into the kitchen.
After relocating to the Northern Neck 23 years ago, Joe became a fixture in local kitchens, ultimately purchasing Terrie’s Place in 2023. Now operating as Joe’s Grill with “crazy good food,” he serves signature Oklahoma-style smash onion burgers—patties pressed with thinly sliced sweet onions, butter, American cheese, toasted buns, and mustard—alongside hand-breaded onion rings and house-made fried chicken. “I’ve spent the past 12 or 13 years perfecting the craft of artisan pizza,” Joe shares.
Joe’s dedication to wood-fired pizzas is evident in his use of Italian Caputo “00” flour, local water, salt, yeast, olive oil, and a high-hydration, long-fermented dough. He believes this technique creates a lighter, more digestible crust, which is then baked in a live-fire oven reaching 700–1000°F.

Jay Wolfson, veteran restaurateur and owner of the premium, family-run outdoor food concept, Small Town Burger in Kilmarnock, Urbanna — and coming soon to Gloucester — will be NWP’s featured guest chef for October’s “Under the Pavilion” event on Thursday, October 15. Lucky attendees will enjoy adult beverages and dine on classic, juicy smash burgers and coastal lobster rolls featuring fresh lobster sautéed in lemon butter, served on a split New England brioche bun, and finished with a dusting of Old Bay. Advance registration is required and limited to four spots.
“To me, this is the American dream,” Jay says. “It’s all about that outdoor, casual, fun, energized vibe—when you picture a small town, you think of quality, integrity, and just pure fun. Kids love coming here. Grandparents bring their grandkids. Parents relax and play a little cornhole. It’s for everyone.”

NWP welcomes back guest chef Brandon Frazier on Thursday, November 5. Local business guy and Lancaster by the Bay Chamber president knows his way around a grill. Enjoy adult beverages under the NWP pavilion or around a fire pit as Brandon kicks off the evening with ginger-infused potstickers, savory edamame, and spring rolls made with pork. The main course will feature a smoky stir-fry with seared steak, chicken, and shrimp. Make it a date night or an evening out with friends.
